Sweet Spicy Chilli Beef Stirfry

Ingredients
  

  • 1 tsp cooking oil
  • 500 g lean 5% beef mince
  • 1 large red pepper
  • 1 large red onion
  • 1 tsp chopped ginger
  • 2 tsp chopped garlic
  • 4 tbsp dark soy
  • 4 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 tbsp rice wine vinegar
  • 1 tsp garlic powder

Method
 

  1. Slice your red onion and pepper. Peel and crush the garlic and peel and slice the fresh ginger. Prep the sauce by mixing the soy sauce, sriracha, honey and rice wine vinegar in a small jug.
  2. Heat a little oil in a pan on medium heat. Coo k the mince till it is fully cooked, brown, slightly crispy and seperated into mince pieces. Set aside in a bowl.
  3. Gently fry off the garlic, ginger, red onion and red pepper. Add in a little ground pepper. Add salt at the end of cooking if needed as the sauce may already be salty.
  4. Add the mince and the sauce and stir well till the beef is coated and glossy in the sauce. Taste test and add any extra chilli, salt or pepper if needed.
  5. Serving suggestion: rice and garnishes include a squeeze of fresh lime, chopped fresh chilli or chilli flakes, fresh coriander (cilantro) and crushed peanuts on top.
