Ingredients
  

  • 4 medium tomatoes chopped
  • 1 tbsp olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste
  • 3 tbsp fresh parsley chopped
  • 3 tbsp fresh chives chopped
  • 1 shallot finely diced (optional)

Method
 

  1. Slice the tomatoes into eighths and place them in a large bowl.
  2. Drizzle the olive oil and red wine vinegar over the tomatoes.
  3. Season with salt and pepper to taste.
  4. Add the chopped parsley and finely diced chives to the bowl.
  5. If using, add the finely diced shallot for extra flavour.
  6. Gently toss the salad to combine all the ingredients.
  7. Serve immediately, or let it sit for a few minutes to allow the flavours to marinate.

Notes

Some rocket or baby leaf salad works well mixed with this salad as well.
