Method
- Trim your chicken breasts if needed and put them in a bowl and coat both side’s well in the spice mix.
- Beat and season your egg with a little salt and pepper and pour over chicken coating it both sides.
- Crush your cornflakes into a bowl stirring in the second spice mix. Dip the chicken breasts in cornflakes coating both sides and do a double coat to use up any leftover egg mix or cornflakes.
- Preheat the air fryer to 180°C or 350°F and add the chicken. Spray on a little oil and cook for 22 minutes (may take less or longer depending on airfryer brand). You can also cook this in the oven at the same temperatures till the chicken is cooked and crumb is crispy. In the oven it could take between 26-28 minutes.
- Halve and toast your buns. Meanwhile mix up the mayo and buffalo sauce. Or use any store bought sauce if you prefer. Slice up your lettuce.
- Once the chicken is cooked it’s time to assemble and enjoy!
