Creamy Cajun Prawn Pasta

Ingredients
  

  • 200 g ready cooked and shelled king prawns shrimp in US
  • 90 g lightest Philadelphia cheese reduced fat cream cheese
  • 2 tsp cajun spice
  • ¼ tsp smoked paprika
  • ½ tsp paprika powder
  • 140 g dried fusilli pasta
  • 1 small low salt stock cube dissolved in 200ml water
  • 150 g chopped broccoli
  • 2 garlic cloves minced
  • ground pepper to taste
  • 1 tsp olive oil

Method
 

  1. Peel and crush the garlic gloves and wash and chop the broccoli. Heat a small amount of water (50ml) in a pan, add the chopped broccoli, put on the lid, and steam for 2 minutes until slightly tender. Prep the stock cube while broccoli steams.
  2. Cook the fusilli pasta according to the package instructions (approx 12-14 minutes in boiling water).
  3. In a bowl, add the garlic, prawns, all the spices and ground pepper. Add a teaspoon of oil and mix well. Then add to the pan with the broccoli and cook on low to medium heat for a few minutes.
  4. Stir in the Philadelphia cheese until smooth and creamy. Add the stock and simmer for 2 minutes. The thin sauce will start to bubble. Drain the cooked pasta and add it the sauce - cook on medium to high heat till the sauce continues to thicken and coat the pasta.
  5. Season with fresh parsley, ground pepper and extra salt if needed.

Notes

To increase nutrient variety  and flavour you can also add sliced red peppers and red onions to dish.
