Method
- Season your chicken breasts in 4 tsp of jerk seasoning spices, salt, pepper, and the bbq sauce.
- Heat a little oil in a pan on low to medium heat so the bbq sauce doesn't burn then panfry your chicken breasts till cooked flipping halfway (approx 20 minutes).
- While the chicken cooks, mix up your salad (grated carrot, rocket, 1 tbsp vinegar, 1 tbsp olive oil, squeeze of lime juice).
- Add the pineapple rings to the pan the last 2-3 minutes of cooking to cook till brown both sides.
- Serve in a toasted bun, layered with the pineapple, then chicken, then salad. Add extra bbq sauce if you like!
Notes
When choosing bread you can go for wholemeal if you want higher fibre, and just be aware of any extra ingredients like palm oil added in the breads. Bakeries will usually use minimal ingredients and there is also nothing better than freshly baked bread!
