When you are too tired to cook anything complicated at the end of a busy working day this Creamy Cajun Prawn Pasta is a speedy satisfying meal. An easy recipe using store cupboard ingredients and ready cooked large prawns (shrimp in US) for ease . Method
- Peel and crush the garlic gloves and wash and chop the broccoli. Heat a small amount of water (50ml) in a pan, add the chopped broccoli, put on the lid, and steam for 2 minutes until slightly tender. Prep the stock cube while broccoli steams.
- Cook the fusilli pasta according to the package instructions (approx 12-14 minutes in boiling water).
- In a bowl, add the garlic, prawns, all the spices and ground pepper. Add a teaspoon of oil and mix well. Then add to the pan with the broccoli and cook on low to medium heat for a few minutes.
- Stir in the Philadelphia cheese until smooth and creamy. Add the stock and simmer for 2 minutes. The thin sauce will start to bubble. Drain the cooked pasta and add it the sauce – cook on medium to high heat till the sauce continues to thicken and coat the pasta.
- Season with fresh parsley, ground pepper and extra salt if needed.
Notes
To increase nutrient variety and flavour you can also add sliced red peppers and red onions to dish.
