Chicken Kofta


Chicken Kofta is made of lean chicken mince with aromatic spices like cumin, garlic, and fresh coriander.  With a kick from the green finger chilli, these koftas offer a healthy, protein packed option that’s versatile with lots of different types of meals. Perfect for a weeknight dinner or meal prep, this dish is low in fat, making it ideal for those aiming to balance their nutrition without sacrificing flavour. 

You can put these in wraps, stuff them in pittas, have them on top of a salad or with a side of rice… these are a great option to have on rotation and you can also make them once and eat twice!

Chicken Kofta

Ingredients

  • 500 g 5% chicken mince Aldi
  • 2 tbsp paxo breadcrumbs
  • 2 tsp ground cumin
  • ground pepper to taste
  • salt to taste
  • fresh coriander finely chopped
  • 1 green finger chilli finely diced (see notes at the bottom of card)
  • 2 garlic cloves crushed
  • 1 medium red onion finely diced
  • spray oil

Instructions

  • Preheat the oven to 180C (350F). Line an oven tray with a baking sheet. In a large bowl, mix together the chicken mince, breadcrumbs, cumin, pepper, salt, coriander, green chilli, garlic, and red onion.
  • Shape the mixture into 10 koftas (small patties or cylindrical shapes).
  • Place them on the baking sheet with a gap between each one. Spray each kofta with spray oil.
  • Cook the koftas for 20 minutes, turning halfway, until fully cooked through (you can slice one in half, check the juices run clear if it is cooked or put it in the oven for a few minutes longer if needed).
  • Serve hot with a side of choice and a cool dip like tzatziki.

Notes

If you don’t like hot or spicy food you can replace the green finger chilli with a milder chilli or a herb like mint.
