Sweet And Sour Chicken

A healthier take on a favourite classic that is lower in fat and calories but just as tasty.
Servings: 2 people

Ingredients

Sauce

  • 1 tbsp light soy sauce
  • 1 tbsp sriracha
  • 2 tbsp tomato ketchup
  • 2 tbsp white rice wine vinegar
  • 80 ml pineapple juice from tin

Other Ingredients:

  • 2 chicken breasts diced
  • 60 g flour
  • 1 egg
  • 1 tsp chilli powder
  • 1 tsp garlic powder
  • salt & Pepper
  • 1 white onion cut in chunks
  • 1 red pepper cut in chunks
  • 1 yellow pepper cut in chunks
  • 3 pineapple ring slices tin
  • 1 crushed garlic clove
  • spray oil for chicken

Instructions

  • Cut your chicken in chunks and put them in a bowl. Season with salt, pepper, garlic powder and chilli powder. Whisk the egg and add it in, then mix it all up.
  • Preheat your oven or airfryer to 185°C or 367°F. Cut the onion, peppers and pineapple into chunks and crush your garlic clove.
  • Dip your chicken chunks in the flour (you can dip them back in the egg / flour a second time if you have some left) then lay them on a tray ready to cook. Spray each piece with spray oil.
  • The chicken should cook in 12 minutes in the airfryer and oven might need 20 minutes. Turn them halfway and cooking times might vary depending on appliances so cook them for longer if needed.
  • While the chicken is cooking, prep the sauce in a small jar. Cut your onion and pepper in chunks and crush the garlic. Heat a pan with a little oil and add the onion, garlic and peppers in and fry them on medium heat.
  • Add all the sauce ingredients to a small frying pan and stir. Cut the pineapple in chunks and add it in. Keep stirring till the sauce tarts to turn a little thicker but still like a sauce not a glaze texture.
  • Once the chicken is cooked, add it to the pan and stir it all up so the sauce coats the chicken.

Notes

Serve with rice and vegetables.
