Prawn Curry Udon Noodles

Prawn Curry Udon

This dish is sweet, spicy and has lovely green vegetables and edamame for a little protein boost with the prawns.
Servings: 2 people

Ingredients

  • 200 g extra large king prawns
  • 2 spring onions
  • 150 g tenderstem brocoli
  • 70 g mangetout
  • 60 g edamame
  • 2 cloves garlic diced
  • 2 tbsp soy sauce
  • 2 tbsp teriyaki sauce
  • 2 tbsp sriracha
  • 1 tbsp honey
  • 200 ml water
  • 2 tsp curry powder
  • ½ tsp chilli powder
  • 15 g chopped roasted peanuts
  • chopped coriander cilantro
  • 200 g ready cooked udon noodles

Instructions

  • Cut the tenderstem brocoli in half and peel and dice the garlic. Prepare the sauce in a jug or bowl (teriyaki, soy sauce, curry powder, chilli powder and sriracha).
  • Add the vegetables to the pan on low medium heat, and add in approx 50ml water. Pop a lid on and steam the veg for a few minutes till cooked but still vibrant in colour. Drain water and set the veg aside in a bowl.
  • Add a little oil to the pan, then add in the spring onions and garlic. Lightly fry before adding in the prawns. Whilst the prawns cook, prepare the udon noodles as per packet (1 minute in boiling water and gently separate with a fork).
  • Once the prawns have been cooking for a few minutes add in the sauce mix. Stir the sauce gently on low heat till it starts to gently thicken and bubble. Add in your veg, noodles and stir till the sauce has coated the noodles and veg. Add any extra salt and pepper if needed.

Notes

Serve with a squeeze of lime / crushed peanuts and fresh coriander (cilantro) on top – all optional!
