Chicken Marinara Meatballs
Lean and Juicy High Protein Chicken Marinara Meatballs
A lighter twist on a classic favourite. These tender, juicy meatballs are made with lean chicken mince (ground chicken) and simmered in a rich, tomato-based marinara sauce that’s brimming with herbs and spices. Perfect for a comforting dinner or a hearty meal prep option, they offer a deliciously healthy alternative without sacrificing flavour. Pair them with pasta, serve over a bed of rice or greens, or enjoy with crusty bread—this recipe is versatile, satisfying, and a firm family favourite.
Chicken Marinara Meatballs
Ingredients
Meatballs:
- 1 kg low fat chicken mince
- 1 egg
- 1 tbsp breadcrumbs
- 3 tsp oregano
- 3 tsp mixed herbs
- 3 garlic cloves
- 1 white onion
- salt and pepper
- spray oil
Sauce:
- 2 tins of chopped tomato
- 1 onion
- 2 garlic cloves
- 1 tsp mixed herbs
- 1 tsp chilli flakes
- 1 tbsp tomato puree
- sugar
- salt and pepper
- 1 tsp olive oil
Instructions
- Preheat the oven to 180C or 350F.
- Finely dice the onions and garlic And set aside half the amount for the sauce.
- Mix all the meatball ingredients in a bowl till well combined.
- Line an oven tray with a baking sheet. Break off pieces of mince and roll them into balls and pop them on the tray (this batch made 24, but could make more or less depending on the size).
- Spray each meatball with a little olive oil spray.
- Cook for 25-27 minutes in the oven till the chicken is cooked through.
- While the chicken is cooking make the sauce. Heat 1 tsp olive oil in a large pan and gently cook down the onions and garlic till translucent. Next add in the tomato puree and cook that down for a few minutes stirring slowly.
- Add in the tinned chopped tomatoes, and stir. Next add the herbs, some salt, pepper and a pinch or two of sugar.
- Gently simmer the sauce till it lightly thickens before adding in the cooked meatballs. Taste the sauce and add in any extra salt / pepper or sugar as needed.
