Butterbean Satay Curry

This Butterbean Satay Curry is a creamy, simple yet indulgent curry.
Servings: 2

Ingredients

  • 2 tbsp dark soy sauce
  • 2 tbsp peanut butter smooth or crunchy
  • 2 cloves garlic minced
  • 1 tsp curry powder
  • ½ tsp chilli powder
  • 300 g drained butterbeans from a tin
  • 1 tin 400ml reduced-fat coconut milk
  • 1 tsp olive oil

Instructions

  • Add the peanut butter, soy sauce, and curry powder to a small jug and stir (add some chilli powder or sriracha sauce if you like some heat).
  • Heat the olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the drained butterbeans, then mix in the prepped sauce.
  • Pour and stir in the coconut milk and simmer on high heat for 10 minutes, stirring occasionally until sauce bubbles and starts to thicken – trust the process, then mixture will be quite then to start but once it starts bubbling the sauce will start to go thicker and creamier in texture.
  • Taste the curry and adjust seasoning if necessary. Serve hot with your preferred side, such as rice, toasted baguette or naan bread and a side salad.

Notes

To increase the protein in this dish you can add some chopped tempeh, or tofu, or edamame as an extra vegetarian protein source. For meat eaters you can add some ready roast chicken on the side.
If you have some vegetables like green beans, or peppers then you can add these in to increase the nutrition in this dish. If you are short on time, you can add a salad to the side.
